My aperitif is usually Champagne, which on occasion I
continue throughout the meal. At Le Veau d���Or it is often
Veuve Clicquot. But of late, La Caravelle (of restaurant
fame) Champagne Blanc de Blancs suits me well.

famous for in the restaurant world: ���Any fool can operate
a full restaurant, it takes a genius to successfully operate
an empty one.���
Seek out Le Veau d���Or. Its unassuming, easily missed
fa��ade conceals a milieu now rare even in Paris, rarer
still in New York. Go quietly, it is about timelessness, not
about of the moment. Strains of Edith Piaf, Yves Montand
and Jacques Brel will envelope you. But rest assured
that Monsieur Treboux��� daughter, Catherine, vivacious
and engaging, assures future generations of delight.
