Chef Philippe Rispoli and Baker Boris Villatte, both natives of France
opened PB in 2009, and it���s already developed a reputation for fine
French cuisine in a casual and friendly setting in Wellfleet. Rispoli worked in Lyon with Paul Bocuse and in the United States with
Daniel Boulud. Villatte worked with Alain Ducasse. So the food and
pastries are authentic French. Appetizers include smoked salmon in
puff pastry, ���the best I���ve ever had,��� said my husband, and, of course,
escargot. Entrees featured are steak frites and salted cod topped with
seared local codfish filet and saut��ed clams. The menu changes weekly, so expect surprises. The night I was there I had a fabulous dish of
frogs��� legs swimming in butter and garlic. A dessert specialty is Fou
au Chocolat: chocolate pudding, chocolate cake, and almond milk
chocolate lollipop. On the bar is a French Limonaire Fournier carousel/street organ, reminiscent of another era, which periodically a
waiter winds up to play Happy Birthday and enchantingly La Vie
En Rose, and suddenly you are transported to Paris swaying with the
music.

Great takeout, no frills, local clams, clam cakes, lobster salad, lightly
fried and day boat scallops and fresh Chatham cod in their fish and
chips in an unpretentious environment with informal seating both
