HYLAND Farkas' newly-opened Rotisserie Georgette. But the ne plus ultra of realizing fantasies lies a few minutes away at Graff, the Peter Marino-conceived temple honoring the rarest of 20 to 35 carat diamond confections. Here, beyond the bronze burnished outer walls, and amid the black vitrines studded with jewelled hair adornments, faceted step-cut emerald delights, and other signature efforts at "creating as much flash as possible," the Graff trademark is abundantly clear. Once told he would never succeed in the business, Lawrence Graff, another dream seeker, has reached the zenith by showcasing the "absolute in true perfection." At prices equal to buying a Park Avenue apartment. It is difficult to duplicate Graff's unique immersive effect. But F.P.Journe and his "passion" for horological science, which has him creating only 800 watches a year, each with technically innovatively calibres and all in either red gold or platinum, also offers unique treasures in his personally- designed "Invenit Et Fecit" boutique at 64th Street. Journe has taken "complicated" timepieces to a higher level, yet his salon offers the simplicity of grace and elegance. Forget minimalism. A 100-year-old family business, Florian Papp is pure baronial extravagance, complete with late Regency carved and gilt wood mirrors, Baroque, fruitwood cupboards, and a manually-operated two person elevator. It moves so slowly, visions of a more genteel past are serenely evoked.
