cured Arctic char. For lobster lovers, you may find a butter-braised
lobster on carrot and lentil puree with cashew-curry and Thai basildaikon slaw. A steak choice might be a port-wine poached beef tenderloin with bone marrow crostini, mushroom consomm��, and baby
vegetables. Dessert undoubtedly includes a few chocolate choices (always my favorite) and fruit pudding or tart.
