I have a personal inclination towards cold soups, whatever the season. Palmer���s chilled strawberry soup is a
favorite. The beef and cheese carpaccio, hamachi raw
fish and veal tenderloin and sweetbreads all make for
pretty awesome meals. Aureole crispy crepes are the
perfect denouement.
